Rules of Engagement for Chef's

Food Hygiene Requirements: All chefs must hold a Level 2 Food Hygiene qualification and be able to provide proof of certification.

Kitchen Access:

  • You’ll have full access to our kitchen, which includes the prep kitchen and downstairs area, featuring 236L fryers, fridge space, pass area, hobs, salamander grills, ration ovens, utensils, trays, and other essentials.
  • Crockery & Cutlery: We provide all the necessary crockery, cutlery, and essentials for the evening.
  • Note: Knives will not be provided, so please bring your own. If there’s any additional equipment you require that we don’t have, you are welcome to bring your own.

Kitchen Cleanliness: Saltwater will remain in control of the evening. Chefs must leave the kitchen as they found it—clean, tidy, and spotless. Any breakages will be charged.

Holding Fee: A holding deposit is required from chefs using our kitchen. This deposit covers both breakages and ensuring the kitchen is left clean and tidy after the event. If the kitchen is not left in satisfactory condition or breakages occur, the deposit will not be returned.

Chef’s Team: You are welcome to bring your own chefs or team members to assist, but payment for their services will be your responsibility.

Payment Structure:

  • Revenue Share: Saltwater takes 25% of the money made on food (inclusive of VAT).
  • Supplies: You are welcome to use our suppliers to get your ingredients, but all costs associated with supplies remain the chef’s responsibility.
  • Alternatively, Saltwater can pay you a set fee to cook for us on our terms, and we will supply all goods, including food. In this case, the event may be canceled if the restaurant is not fully booked.

Restaurant Capacity: The restaurant seats up to 44 people per serving, meaning you can serve up to 88 customers over two sittings.

Consecutive Nights: If the Kitchen Takeover proves popular, events can run consecutively over multiple nights. This option is available at the chef’s discretion.

Cancellations: If the chef cancels their participation in the Kitchen Takeover, the holding deposit will be kept by Saltwater
